Although you are technically better to transfer digital signals over distance, in this case it probably better to transfer the analog. The LCD signal are fast and subject to cross-talk as well. The analog stuff is slow and the ADC input impedance is very high compared to the cable impedance, so you will have negligible loss. Also you only need 2 wires for the analog ( plus shield ) compared to 8 or so for the LCD.
