instead of using waitms you can use waitUS , of course adjusting the value a factor 1000.
waitus does not trash regs.

you should use/enable the brown out detector.
it prevents eeprom corruption when the voltage goes down the selected level.
another way is to use external i2c eeprom.

when you make a driver it can work. the chip you mention has a block erase of 4 KB minimum. So that one is not really suited.
the best would be if you can erase 512 bytes.
when your chip has plenty ...
